Founded in 2016 by Jude and Lucile Spaety in Saint-Lothain, Jura, Cabaret des Oiseaux is a small, artisanal winery rooted in sensitivity and ecological commitment. On 2 hectares of organically farmed vines, they use horse traction and vinify naturally, honoring the living soil.
