🍷 François Bouillot-Salomon: Natural Craft Between Rhône and Burgundy
François Bouillot-Salomon is a family-run wine project led by François Bouillot and Claire Salomon, based in Ampuis (Northern Rhône) and Malain (Côte-d’Or, Burgundy). Founded in 2011, the estate farms about 5 hectares organically (certified), with a low-intervention approach in the cellar. Vinification uses native yeasts, sometimes without added sulfur, and grapes come from massal selections (Syrah) and clones (Viognier). The domaine produces wines under IGP Collines Rhodaniennes, Vin de France, and Coteaux Bourguignons, along with artisanal organic blackcurrant nectar.
