🍷 Guillaume Gilles: Granite Tradition and Artisanal Precision in Cornas

Located in Cornas, Northern Rhône Valley, Domaine Guillaume Gilles represents a deeply traditional approach to winemaking. Trained by Robert Michel (a Cornas legend) and Jean-Louis Chave (Hermitage), Guillaume farms 2.5 hectares organically (certified), on the appellation’s finest granite terroirs: Chaillot, Combe, Terrasses, Grands Murs. His winemaking is low-intervention: manual harvests, partial destemming, long macerations, native yeasts, and 15–18 months of aging in barrels and demi-muids. The wines are powerful, elegant, and built to age.
