🍷 Julien Guillon: Alpine Natural Wine and Biodynamic Freedom in Valais
Based in Ayent, in the Swiss Valais, Julien Guillon is a radical and poetic winemaker cultivating about 5 hectares of biodynamic vineyards between 600 and 900 meters above sea level. After studying viticulture in Beaune and working at Cave 20G in Geneva, he settled in the Valais mountains in 2016 to produce natural wines with no additives, no added sulfur, and no filtration. He works with a wide range of native and international grape varieties (Petite Arvine, Amigne, Humagne, Cornalin, Gamay, Pinot Noir, etc.) on steep, often terraced plots. Each cuvée is a micro-expression of place, often vinified in amphora or barrel with great sensitivity.
