Patrick Desplats is a legendary figure in the Loire natural wine scene. He co-founded Domaine des Griottes in 2001 in Saint-Lambert-du-Lattay (Anjou) with Sébastien Dervieux (Babass), and has run it solo since 2011. The estate is a 9-hectare polyculture farm, organically farmed, with old vines on schist soils. Patrick vinifies without additives, sulfites, or filtration, using spontaneous fermentation. His wines are vibrant, free-spirited, often exuberant, reflecting an intuitive, artisanal, and deeply human approach. He champions Loire varieties like Cabernet Franc, Pineau d’Aunis, Chenin, and Gamay, with bold winemaking and playful cuvée names.
